Recipe for easy Nutella sandwich cookies

Super Easy Nutella Sandwich Cookies

When we have Nutella in this house it generally has a very short lifespan unless I hide it high up at the back of a shelf or somewhere the boys would never look for it, like in the laundry room. This particular jar was bought to make Nutella ice cream as a Father’s Day treat and has been doing its worst since then on toast and I’m sure, when I’m not looking, direct by the spoonful into snacking mouths. We are by no means a sugar free household but I do try to keep it reasonable so wanted to make a little more progress on what was left so the jar would empty sooner rather than later.

This recipe originally came from an Instagram account based in Egypt (@sweetaholic) that looks like the internet version of one of those candy shops on Oxford Street that are actually laundering money. Nearly every recipe has some kind of branded sweet in it and, the more I watch it, the more I can convince myself that the woman who shows up in the videos could be A.I. generated. All that being said, the recipe works and even if you don’t make them into sandwich cookies you will end up with a super easy plate of rich, fudgy, deeply chocolatey snacks. And no one I know has ever said that would be a problem.

Keep in mind the provenance and don’t expect a cookie that’s going to blow you away with subtlety. As one of the comments states “Nutella is loaded with garbage ingredients.” Correct, it is but it also has plenty of real uses. These are emergency chocolate cookies because you can go from empty bowl to out of the oven in a legit thirty minutes. Honestly, if I was having a certain kind of dinner party, I would make them a little bigger and serve them warm with vanilla ice cream as a version of a brownie sundae. I always forget how the actual math of a ratio goes but they are the one where the effort you put in is very low and the satisfaction of what you get out is very high. Effort to reward? Reward to effort? I don’t know but you get it.

These are quick, sweet and might make you feel a little dirty. Don’t eat them right before you go to the dentist but, by all means, make a batch of them whenever you need that comforting, it-will-be-alright-in-the-morning kind of treat for a good day or bad. You may find out you’re not as sophisticated as you thought and there’s not a thing in the world wrong with that.

Recipe for easy Nutella sandwich cookies

Ingredients

For the cookies

300g Nutella
1 egg, room temp
85g all purpose flour
1 tsp baking powder
50g mini chocolate chips (optional)

For the icing

75g unsalted butter, softened
110g icing sugar
1 tsp vanilla extract
1 Tbsp milk or water

Instructions

Preheat your oven to 180C / 160C fan.

In a medium sized bowl, put the NUTELLA, EGG, FLOUR, and BAKING POWDER. You can mix it by hand but it will go quicker with a hand mixer on medium speed. You’re going to end up with a dough that is on the firm side and feels really oily when you roll it. It is ok and bakes up fine.

Mix in your CHOCOLATE CHIPS, if you’re using them. Then roll the dough out into 18 equally sized balls. They don’t spread much so you should be able to fit them all onto one baking sheet. Put them into the oven for about nine minutes. They don’t naturally flatten out so if you want that flat sandwich cookie shape, let them cool for several minutes out of the oven and then press down on them gently with a flat bottomed glass.

While they are cooling, in a medium sized bowl mix together the BUTTER, ICING SUGAR, VANILLA and MILK or WATER. If you want be fancy you can pipe it into onto the cookies but spreading it out with a spoon means fewer dishes. When the cookies have cooled completely, spread the icing on one cookie and sandwich it together with another one. Job done!

Don’t throw out the additional icing! It is great on fruit or an oat biscuit. Or an oat biscuit with fruit.
